BEDM 13: A rather tasty salad


Rocket, feta and pomegranate salad
Here's my mixed up post for today for BEDM which was all about sharing a recipe or something about food.


Today, I thought I'd share a different salad I made. It was based on one we tried at The George and Dragon in Mountnessing, Essex some years ago and last week, after realising we'd had a pomegranate residing in there for a couple of weeks, I felt it was time for eviction!

You will need:

Pomegranate
Feta cheese
Rocket
Balsamic vinegar
Olive oil
Cucumber
Tomato

CBC dealt with the pomegranate but when I just asked him, he said it was a right pain and someone should do a youtube video on how to deal with them.  I looked and there are hundreds of the beasts! Here's a good one!

I still can't believe Persephone, Greek Goddess refused all food but ate pomegranate- sad!

So you just need to cube up your feta, chop your tomatoes, add in your pomegranate, cucumber, tomato and rocket (I actually used a mixed leaf and rocket bag here- worked just as well!).  Drizzle it with olive oil and balsamic vinegar and grind some pepper on top and that's that.

In case you are worrying about the balance of my diet here, worry not.  Alongside the salad- I served CBC and I two slices of wholemeal brown bread with a slice of Lidl Gravalax (smoked salmon with dill on top). It came with a delicious sweet mustard sauce and went very well with the salad.

And in case salads aren't you thing, here's a few other items we have cooked lately:

Food 1

Top row: Last night: Spaghetti with fried asparagus, pak choi, cherry tomatoes, courgette, green chilli; on top, buffalo mozarella (uncooked) with Greek basil and black pepper)- very tasty
Bottom left: Sunday: it was 9.45pm, I was a bit hungry.

Bottom right: very unhealthy Dairy milk marvellous ice-cream. Choc and vanilla ice-cream, mini smarties, popping candy, jellies.

Food 2
Top row: conghilli with broccilli, sliced tomatoes, shallots, wild-garlic pesto (made by me!) and pak choi.
Bottom row:  Use em ups stew:
tinned tomatoes, tomato puree, tin of kidney beans, green beans, frozen sweet corn, swiss vegetable bouillon, onions, barley and left-over broth mix.
Bottom right: headless Lindt Almond and milk chocolate bunny.

Food 3
Top row:  spinach and sweet potato dhal with wild rice.

Bottom row: One of those, "What do we have?" evenings:
We ended up with: baked teriyaki tofu; grated carrot, avocado and lime salad; boiled rice; kale wiht with shallots.

Lots of tasty dishes!  We're a little boring in that we tend to eat most of the same vegetables but we always try to make them delicious!

    The spaghetti look delicious!!!

    I will have to skip the pomegranate recipe ! I love pomegranate...it grows naturally where I'm from and you can literally pick wild ones every time you go for a walk in the Spring....but my husband would go mad if I prepared a salad with it.

    We eat them by themselves here...or in sweet combinations...never in a salad. I also prepare a juice from it. I can tell you how because it's really simple. You just have to clean it, cover it completely with sugar and leave it (in a jar of some kind) for 3 days. The juice will form naturally and you need only to pour it into something...but you will need large quantities, minimum half a kilo to make the juice. that's the only catch.

    The salad does look yummy ( I prepare similar salads myself). The smoked salmon looks fantastic too!

    I've literally worked up an appetite reading this post!

  3. I've only had pomegranate once, when I was about 11 or 12. Can't have been that taken with it as I've never had it again! But that salad does look beautiful. I'll stick with the bread and gravad lax. Yum!!

  4. yes, you can totally pick pomegranate here but you must move fast once they come in season because everyone wants them! In Dalmatia we have them, but here in Herzegovina (where my husband is from) there is even more of them....and everyone is crazy for them, it's like their regional fruit or something...there are even songs about it....Herzegovina, the land of wine and pomegranate.
    the season to pick them is Autumn not Spring (I got confused there for a moment). The wild ones are more healthy but they are not as sweet. Their taste resembles lemon a bit but they have a lot of vitamin E. ...they are the best kind for the juice...but juice is usually made by mixing the wild ones and the ordinary ones because the seeds of the wild ones are smaller.

  6. Your food variety is amazing and looks very healthy. I don't care to bother with pomegranate. I'll leave it for the Greek Goddess. I'm not a fan of smoked salmon either but love it cooked any which ways.

    You were asking about what fiddleheads taste like.
    They have a unique taste but are similar to asparagus but not quite. That's the best i can do describing the taste. When the Queen came to New Brunswick, Canada she was fed some fiddleheads as a local food.

  12. I love pomegranate and it is very nice to add it to a salad! I liked it very much! And the ice cream you showed! Unfortunately, I am a fussy eater :( Really unfortunately and I have progressed, really, experimenting things that I used to say "no!" I love asparagus and the spaghetti with them look great! But I must confess that I would adapt some recipes to me :) No cucumber, no feta, no pepper :) Then tomatoes my beloved ingredient, and mozarella and other things, I love!!!! Very nice recipe and pictures!
