Beautiful greens

CBC has decided to become a Pescetarian for the new year but with the aim of eating mostly veggies and only fish occasionally.  We often each veggie anyway, but occasionally when I am making my random concoctions, I find something that works really well.

On Monday, I combined fresh tagliatelle (if you want to do this vegan, then you can just use regular tagliatelle (which only took 4 mins to cook) with a yellow pepper chopped, 3/4 of an aubergine (diced and fried a little olive oil and with freshly squeezed lemon. I added in some chopped endives/chicory (20p waitrose!) with lots of herb de provence and crushed pink peppercorns. When the pasta was cooked, I spooned some pesto straight into the bowls of pasta and mixed it in with a chopped avocado. Then I added the veggies on top. Finally, having retained the hot pasta water, I threw some handfuls of spinach in there for about a minute  and served it on top of the pasta with a generous portion of more crushed pink peppercorns on top.

CBC, suprisedly, said "Ooh, this is nice!?" so I thought I'd share. It took very little time to cook and was tasty.

  1. That looks absolutely yummy. I'm afraid my bravery does not extend into the kitchen so I shall have to rely on you for that. I measure and measure and everything unfortunately tastes measured as well. Why? Why?!

  2. I rarely follow a recipe exactly unless it's a cake or cookies.

    Your dish looks very healthy. I make a lot of stir fry with a good variety of fresh veggies but I like to add a little chicken in the mix.

  7. Looks delicious. My spices got soaked in our burglary, so just had to throw away a bottle of peppercorns - feel so annoyed about the food waste. CBC being pescatarian gives lots of room for jokes though [you can call him Mr Mussels, there's a time and a plaice for such humour, and serve him with a piece of cod which passes understanding...]
