
Dinner in my book has never been following a recipe. Or rarely. It usually consists of bunging the same items together. Or concocting a random collection of not really matching foods. CBC used to phone me when we lived apart and ask what I'd had for dinner and be bemused at the stand-alone items that I would eat separately or bung together on the plate. I would happily eat the same items each evening though I do like trying new things and always appreciate new things (especially when someone else cooks.). When I lived in Bali, I honestly ate pretty much the same meal morning and evening for most of that year (with a few occasional variations) and I was perfectly happy (except for nice bread cravings. And cheese)
I find recipes very demanding and don't particularlyl like having to buy a big batch of something just for one small part. However, I picked up the Co-operative Food Magazine during half term and saw this recipe for Greek-style fritters. Omelette is one of my favourite dinners so I figured this would be an interesting take on this. If you want to make the Greek style fritters,

They are basically made of eggs, spring onions, courgettes, lemon zest, flour, feta, parmesan (I didn't bother, just added extra feta nor did I add fresh herbs) and they are super tasty served with salad. We also served them with houmous. We made them for my friend M as she is veggie which she appreciated, though I am not sure she appreciated the stressed ogre I turn into when trying to follow a new recipe and CBC is getting in the way, making a mess. A word of warning- don't grate the courgettes with the large slicy grater function- do them smaller as my fritters were hard to keep together. Also make yours a bit smaller than did mine! We had the left over ones the next day for lunch- they were still delicious cold with more salad.
Oh and in the 6th picture, we finally christened the nice decanter we were given as a wedding present by CBC's best man. It's perfect for water as I don't fancy washing it out from wine-I can imagine it just slipping out of my clumsy hand!

ReplyDeleteI like the free mags from the supermarkets , there is nearly always something new in them I try out on the family. Will pass this one by though as no-one likes courgettes, but glad your friend appreciated your cooking them.

ReplyDeleteI looks lovely and sounds delicious! I love to follow a recipe but I do get disheartened when it doesn't look like the picture hehe. I have been known to eat a random selection of foods - normally when I need to go shopping but can't muster the enthusiasm to go. Sometimes it can be rather enjoyable I think.

ReplyDeleteI'm not a big fan of cooking, likely because I'm not a foody type, but I have to cook from scratch or else my tummy objects! Andy is the type who will put all sorts of things which 'don't go' together on a plate but that unsettles me!
ReplyDeleteGood thing you didn't use Parmesan- it's not vegetarian! You can get a few veggie versions, but most shops don't stock them. These sound lovely; well done for trying something new. ReplyDeleteIt's seriously delicious and doesn't involve buying any ingredients we don't normally have in the house anyway, apart from limes. Also really good with an added sprinkle of feta. Just ignore the swearing :p xxx
